- Serbian and Macedonian baked sweet pepper dish known since the Middle Ages. An old Serbian legend says that during the Serbian Empire of the XIV century, when King Stefan Urosh IV Dusan ruled, aivar in the Serbian palace was eaten with golden spoons and forks.
During the paprika harvest season, wood-burning stoves appear in the courtyards of Serbian houses, on which huge pots are placed, and women begin to cook delicious ayvar.
Aivar can truly proudly bear the name "caviar", as it comes from the Turkish word "havyar", which meant salted caviar. The fact is that in the 19th century in the Balkans, caviar of the Black Sea sturgeon was actively harvested, which reached Belgrade along the Danube. This caviar was an extremely popular dish until the end of the 19th century, when caviar production began to decline. As a result, Belgrade began to offer a dish of baked peppers, which was called "red aivar" or "Serbian ayvar", and when black caviar finally disappeared, the need for an adjective disappeared, and the caviar from sweet peppers became just ayvar, which is often eaten with bread. fried, cheese, eggs, fish, cold meat, and just like that.
For aivar, a special kind of red pepper with a fleshy structure is used. The pepper is fired in an oven at a temperature of 700 ° C, caramelizing inside. Peeled after baking, the pepper enters a vacuum unit, where it is boiled for a strictly defined time to obtain a creamy consistency.
